Like many folks, I adore a good pizza. When I was diagnosed with diabetes, I had to stop indulging in the high carb and ubiquitous variety with crusts made of flour. We tried various types, including cauliflower crust, but what we enjoyed the most was pizza with a crust made using ground chicken. It holds together well, it has some of those air pockets like bread crust has and it’s delicious. We have honed the recipe over the past year and have come up with something that we term a “deathbed meal” or a meal that we would ask for if we only had one meal left to eat.
